Gatlinburg Getaway

Well, we've been gone and now we're back! Last week, we took a much-needed family vacation to the Smoky Mountains. It was essentially a long weekend, and the best part was that we didn't have to travel too far with two kiddos! We invited our good friends, The Townsends, to join us, so we rented a cabin not far off of the Gatlinburg "strip" and had a wonderful time together!

Here's the view from Jonathan and I's bedroom! It was so peaceful and quiet on top of this mountain. Believe me....we were waaaayyyyy up there.



Liam slept in the pack'n'play in our bathroom. He slept like a baby...literally! He slept so great! Here he is one morning as I went to get him up. Notice that he has a major mosquito bite on his forehead. Poor baby got attacked our first night there.


Think he's teething?



Robert, Nora, and Layla are looking out of a front window where a HUGE garden spider had a humongous and beautiful web. We watched this spider constantly! She would catch moths, beetles, and lots of other insects. We'd watch her catch them, move them all across the web, eat them, move them again. It was so weird and so gross.


Our first full day in Gatlinburg, we packed a picnic and headed to the Smoky Mountain National Park. We had thought about driving through Cade's Cove, but by the time we ate breakfast, got the whole crew ready, made lunches, drove to the park....yeah, we had about 2 hours before naptime. We decided to enjoy a picnic and found a nature trail which the girls LOVED! It was great. The weather was beautiful and we were just so happy to be away and enjoying God's beautiful creation.

The second day we were there, we went for breakfast at the Pancake Pantry. Oh. dear. Delicious! I got the French Toast. I know, I am a rebel. But, let me tell you. SO GOOD. Jonathan got the pigs in a blanket. Nora got "Bears in the Snow." (Kiddie pancakes in the shape of bears with powdered sugar sprinkled on top). We devoured our breakfast! Ummmm.mmmm. I want some right now.

After breakfast, we spent the day at Dollywood. We had such a great time and the girls loved riding the carousel and all the kiddie rides. Jonathan and I even got to ride a few rides and a roller coaster together. Thanks, Robert and Amy!

Saturday, we decided to go to the aquarium. We had a great time. However, it was raining torrentially in the area, so I think everyone other tourist in Gatlinburg was at the aquarium. Not to mention, it was Saturday, so things are naturally more crowded then. The girls had a good time, but I don't think they are at the prime age to appreciate everything the aquarium has to offer. I think it may have all looked the same to them.

We are so blessed to be able to take a vacation with our family and friends. I appreciate my husband so much for making this happen. I had such a relaxing time (as relaxing as things can be with two babies, two and under). Jonathan was such a help to me and anticipated ways to serve me and the kids. We had a wonderful time fellowshipping with the Townsend fam. They are so funny and such great friends!

Cranberry Chicken

Tomorrow is the first day of Fall! YEAH! I love fall in Tennessee!

Speaking of fall, here is a delicious and simple supper idea that reminds me of fall weather! There's just something about cranberries that makes me think of cooler weather, Thanksgiving, changing colors. My neighbor, Anne, made this meal for us for dinner a few weeks ago and I made it myself for our supper tonight. It was so yummy!

Cranberry Chicken

1-2 lbs of boneless, skinless chicken breasts
1 can of whole berry cranberry sauce
1 package of dry onion soup mix
8 oz. of Catalina salad dressing (I used Kraft Light Catalina to cut back on fat and calories)

In a bowl, combine the cranberry sauce, soup mix and dressing. Place chicken in a casserole dish and cover chicken with sauce mixture. Bake in a preheated 350 degree oven for one hour, or until chicken is cooked through. I served this with white rice and turnip greens. The sauce is so yummy and tastes great over the rice!

This is definitely one of our new favorites!

P.S. Jonathan brought home candy corn yesterday, and I have already eaten way too much! I just love this time of year!

Little Man







Finally Fall






Changes

Many things have been going on in the Bradshaw house the past few days. Nora started complaining about an earache on Wednesday evening. She was running a low-grade fever that evening, but didn't seem to be acting out of the ordinary, so I didn't really think much of it. On Thursday, her fever remained and she kept mentioning her right ear, unsolicited. I called the nurse, and she said it may be swimmer's ear, so she called us in some drops. After some confusion at the drugstore, we finally got our drops Thursday evening....that was dramatic, trying to put drops in Nora's ears when she was in pain and not wanting to cooperate. By Friday, her low-grade fever started to escalate and I just knew she wasn't feeling well. We went to dinner with JB's parents, and when we got home, I took Nora's temp and it was 103.7. I woke up on Saturday morning and got an appointment right away. Dr. G confirmed that Nora has a double ear infection! She was so pitiful yesterday and was definitely not feeling well. Thankfully, though, she was seemingly feeling much better by last night and her fever has started to decline. This morning it was only 99. Praise the Lord for healing and for antibiotics!

In Liam's world, I have been trying to make some changes. Up until this point, Liam has been in a pretty tight 2.5 hour feeding schedule during the day. About three weeks ago, we introduced rice cereal, and since then, he gets a tablespoon of a fruit or veggie mixed in with the cereal two times a day. He usually gets a bowl after his first feeding of the day and around supper time. Sleep hasn't been going so well for Liam---or should I say, not going so well for Momma. He takes a pacifier when going to sleep, which is nice because he goes down so easily and the paci is great when we are out and about to keep him calm. However, in the middle of the night and oftentimes naptime, he stirs in his sleep, realizes that he has lost his paci, and then cries until I come in to reinsert it for him. As you can imagine, this can get old very fast. Some nights I only run in there once or twice, but there are several nights a week where it takes him several tries before he settles down. I am so exhausted sometimes that I just end up sleeping in the twin bed in his room because I don't know how long it will take and I don't want to keep running back and forth between our rooms. For quite some time now, I have known that it's time to let him soothe himself to sleep, which may mean crying it out for a bit, but to be honest, I have been too lazy to let that happen. I would rather miss a few minutes of sleep here and there (so I think), then stay up the duration of his crying. So many nights I would go to bed with the intention of letting him cry it out, only to cave in around 3:00 am when he wakes up because I am too tired to think straight. As Liam is growing and wiggling and rolling over, it is becoming more and more apparent that the longer I wait, the harder it will be. He is so aware and is pretty mobile for his age, so if we don't get this ball rolling, it will be a nightmare to incorporate later on.

I had this deep, wishful thinking that the introduction of cereal into Liam's diet would cause him to stop waking up in the middle of the night. So far, that hasn't stopped him. I have also been wondering when he would stretch from the 2.5 hour feedings to a three hour schedule. I mean, he's a big, healthy boy and I just keep assuming that he requires more food throughout the day than Nora did as an infant. By this point, she was already to a 4 hour feeding schedule. I don't mind feeding Liam every 2.5 hours during the day, but I was curious about how/when this would change. Also, Liam takes 3-4 naps each day. His first and second naps usually last about 45 minutes, while his long nap (3rd feeding cycle) usually lasts anywhere from 2-3 hours. At this point, he takes a 4th nap some days and other days he doesn't seem to need it, so we skip it. I just look for his cues on that one.

I decided last weekend that I need to just bite the bullet. I have a feeling that he is close to beginning the teething process, and another thought I had about procrastinating even more is when he DOES begin teething, how will I know the difference between teething and stirring in his sleep. I also don't want to wait till he is teething to let him cry it out because that's just mean! If he's in pain, I need to tend to him. I have started letting him cry himself to sleep when he wakes in the middle of the night. The first night I did this, he cried for ten minutes total. I was very surprised that it took so little time, but I was relieved! It is so hard to listen to your baby cry. The second night went just like the first where he only cried for a few minutes, then was out. The third night, however, was just terrible. We ended up caving in and giving him his paci. Nora was sick that night, as well, so we were just trying to choose our battles. Last night, he did wonderfully. He stirred three times total. The first time he cried for no more than 10 minutes and I heard him stirring two other times, but I'm not even sure he actually cried. He woke up at 7:30 am, so I got him and we started our day. That was a total of a 9 hour stretch without me intervening at all.

In doing some reading, I came across an article that mentioned the importance of putting baby down for naps at the appropriate times. It said that many moms try to keep babies awake between naps as long as possible because they assume that the longer baby is awake, the more tired baby will be, and the longer he/she will nap. Those are my thoughts exactly! It seems to make sense to me. The article went on to say that babies have a window where they are good and awake, but that we need to put them down for their nap at the appropriate time which will actually allow them to sleep better during naptime. After reading it, I knew this sounded familiar, and I think I was given similar advice with Nora. Baby's awake time depends on his/her age. The mom who wrote the article gave a schedule of her baby girl's day, detailing the duration of wake and nap times. Her baby girl is just a few weeks older than Liam. I decided I would try her advice. I was a bit skeptical, though.

Yesterday we were going to be home all day because Nora was sick. After Liam's first feeding, he had a bowl of cereal and some awake time. I watched him closely for signs of sleepiness and after about one hour of being awake, put him down for a nap. He slept for 1.5 hours, causing his next feeding to be exactly three hours after his last feeding. Wow, I thought! That was a coincidence! We'll try it again next naptime. So, after I fed him, we played and had awake time, then I put him down again just over an hour of being awake. He went down again and slept until I woke him for his next feeding. After having two good naps, I thought for sure his next nap would be a wash. This third nap is typically his best nap of the day, so I was anticipating it being a short nap since he had already slept much more than normal. When it came time to go down for a nap, he seemed exhausted. I myself was completely worn out from a rough night, so I went to lay down thinking it would only be a short amount of time before Liam woke up again. When I woke up, I was surprised that 1.5 hours had gone by without a peep from either kiddo. It seems that the advice seemed to work. Liam went on a three hour schedule all day yesterday without any intervention from me besides putting him down for his naps earlier than I had been.

Today hasn't gone quite as smoothly. He has taken longer naps than usual, but they weren't quite as long as yesterday. I think the advice from the article is valid, but part of me thinks that God's grace was more than sufficient for me yesterday in Liam sleeping more because I had a sick girlie and was tired myself. I think I will continue to try to be more attentive to Liam's signals that he's tired instead of forcing him to stay awake because I think he'll sleep longer if he does.

I share all of these things more for my benefit than for any other reason. I am constantly praying for the Lord to give me wisdom in making these decisions for my baby boy. I am asking for grace for myself and for Liam. Lord, give me restful sleep, no matter how long it is. Help me to be content in this season of less sleep because my boy will be grown before I know it. I know, also, that His grace is always present for me and that he always gives me what I need to get through each day. Lord, give grace to Liam and help him transition easily. Teach me when to give grace to him and when to train him. I know I don't have all the answers, and I know I may have a different perspective in a few months. I am also aware that the decisions I make aren't the same for other people. Help me, Lord, to be patient and not to be anxious. Help to cherish my husband and my children and to savor every moment we are given together.

Once Again, The Pioneer Woman Proves To Be My Hero

Oh, dear. These are incredible.



I saw this recipe on The Pioneer Woman Cooks a few months back. I knew they looked heavenly, so I printed out the recipe. I can't justify baking something like this for no reason. But, I finally had an occasion to bake these delicious little desserts! They are amazing and you MUST MUST MUST try them!

Individual Raspberry Cobblers
Makes 24 cobblers

Ingredients:
2 cups self-rising flour (must use self-rising)
2 cups sugar
2 cups milk
2 sticks butter, melted
1 teaspoon vanilla extract
2 cups fresh raspberries
Extra sugar for sprinkling

Directions:
Preheat oven to 350 degrees.
Combine flour with sugar, then whisk in milk. Whisk in melted butter and vanilla. Pour 1/4 cup batter into greased muffin tins. Sprinkle a few raspberries on top. Bake at 350 degrees for 45 minutes or until golden brown and crisp around the edges. Invert onto a cooling rack and serve warm with vanilla ice cream or whipped cream.

***This full recipe makes 24 cobblers, but as you can see, it is easy to half or double this recipe if you need to.
***I sprayed my muffin tins with Pam, then lightly floured the bottoms. She mentioned in her blogpost about these cobblers that they tend to stick. I had trouble getting my first batch out of the muffins tins, so I used a knife to loosen the edges. Some fell apart, but most of them stayed intact. I recommend letting them set for about 5 minutes to cool a bit before inerting them.
***These were so delicious and so easy. I bet they would be equally as yummy if you were to use blueberries, blackberries, or strawberries.

The Best Day

I have to admit that I am a total Taylor Swift fan. I know, I am 27, not 16, but we have one of her CDs, and I really like her music. She's got some really good lyrics, atleast on the CD we have. I haven't really listened to her other stuff.

Anyway, the other night I had a rare night out with a girlfriend, and on my way home, I put on some Taylor Swift. I've heard this song many times and really love it, but listening to it the other night made me think of my Nora girl. She's growing so fast, and my days with her seem to pass so quickly. It made me sad, but happy at the same time. Music has a way of doing that to me.

Is It a Cat? Is It a Bird? Oh Wait, It's My Son!

Some Firsts for Liam

Well, we surely had a wonderful Labor Day weekend. Although our Labor Day was pretty much spent "laboring" around the house, we got a lot of things done that we'd put off and got to spend some good quality family time together. The month of August was ridiculously busy for us. Jonathan had a crazy work schedule with lots of meetings that kept him out many week nights, and all in all, we were just BUSY. Thankfully, though, that is not the norm for us, so hopefully life will slow down a bit so we can enjoy each other and this coming fall weather! I am SOOOOO excited about Fall!

So, on to Liam and what new things he's been up to:

Liam watched his first UT Vols game this past Saturday. We had a family get-together at the Bradshaws and watched the game. Thankfully, the Vols kicked some tail, so we were quite proud of them. However, I have to admit that I was a bit bored with the game because they totally smoked the WKU Toppers. What is a Topper, anyway? Confession: We did not stay up to watch the LSU Tigers play, but I am proud to announce that they, too, won! GEAUX TIGERS!

Anyway, Liam is pretty much feeling better, so we decided to introduce him to rice cereal over the weekend. He loved it, and really didn't have any trouble with getting the gist of how to do the whole eating thing the first time. Times 2 and 3 haven't been as smooth, but I know he'll get the hang of it eventually. Here are some pictures of this momentous occasion:











So, funny story. Nora was totally into Liam eating cereal. I had her help me pick out a bib for him, and I set Liam on the floor in his bouncy seat so Nora could have a great view of the whole process. In the midst of feeding him, Nora decided that SHE wanted to try the rice cereal. So, we let her. BIG mistake. She spit it out and got really upset....I think because Jonathan and I couldn't help but laugh at her reaction to eating the cereal. I trust rice cereal tastes pretty yucky. Another bit of news for Liam is that he can roll over! On Friday, actually, (his 4 month birthday), he started rolling from belly to back. He's done it several times now, and usually does so when he wakes up from a nap. It's really cute to go in there to get him only to see his big ole eyes staring up at you! When on his back, he rolls to his side, so I think it's only a matter of time before he's rolling from back to belly. Ah, how different it's going to be to have a kiddo that is mobile at an early age! Nora NEVER rolled. EVER. I love how different they are.

We also busted out the good ole exersaucer this weekend. Liam is nearly close enough to supporting himself in it without help, but we stuffed a blanket around him and he can sit really comfortably in it for a while. He was totally intrigued by the massive number of toys to look at. Nora likes to "bounce" Liam in the exersaucer, so we have to watch her like a hawk. T-R-O-U-B-L-E that girl is. But she sure does love her baby brother! No pics yet of Liam in the exersaucer, so I"ll have to get some of those real soon.
